Her vivid storytelling brought the magic of France to life, planting a seed that would later grow into a dream. Years later, when the opportunity arose to create a restaurant in a charming downtown space, I was instantly reminded of the cozy, subterranean bistros of Paris and New York. Inspired by those early stories and the spirit of Eloise, La Fable became a love letter to French cuisine and timeless imagination—an experience meant to transport guests to their own memories of Paris.

  • The Federal Rehoboth

    The Federal’s signature fritters trace their roots to Piedmont, Italy, where Chef Gray trained after graduating from the Culinary Institute of America. Inspired by Sicilian arancini, these crispy risotto balls debuted in 1999 on the menu at Equinox, Todd and Ellen’s first Washington, D.C. restaurant, as a popular shareable starter.

    In 2021 they opened their beachside bistro in Rehoboth Beach, featuring their beloved fritters and elevated coastal fare.
